Peach crumble pie

Who said crumbles belonged to autumn? This peach crumble pie is absolutely refreshing and tastes like having a piece of sunshine in your mouth!

I am currently trying to make the most out of what is left of the summer by using peaches in pretty much everything I can. I love peaches and nectarines and I do think they go with literally anything, so I decided to give a go at a crumble, and I am so pleased with the result!

This crumble pie is super easy to make and it’s so full of lovely flavours, you will not be able to have just one piece! I had it on its own with some whipped cream and oh, it was so refreshing.

I must say that part of me making this was thinking about mixing my 2 favourite things of autumn and summer, which are peaches and all of the crumbles!

The best thing about this pie is that you can swap the peaches for literally anything, you can go classic with some apple or try something summery like strawberries!

This is how I made it

  • The base of the pie is incredibly easy to make, all you’ll need is flour, granulated sugar, brown sugar, oil, 1 egg, baking powder and just a little bit of salt. Mix these in a bowl until you have a dough like consistency. It will feel grainy and crumbly, but that is the point of the crumble!
  • Now put your crumble base on a greased baking tin, you should have a fair amount left, so just put enough to cover your tin. We will use the rest to top the crumble.
  • Cut 3 peaches in wedges, put them in a bowl and add agave nectar and vanilla. Mix well and let them sit for a couple of minutes and then add them to the base of your crumble.
  • Sprinkle the remaining of the crumble over the peaches and cook in a preheated oven at 180 degrees for 40-45 minutes, until it’s nice and golden on top.

Peach crumble pie

Ingredients:

  • 225 gr of flour
  • 66 gr of granulated sugar
  • 50 gr of brown sugar
  • 1 egg
  • 120 ml of vegetable oil
  • 2 tsp of vanilla extract
  • 1 tsp of baking powder
  • 1/4 tsp of salt
  • 3 peaches

For the peaches:

  • 2 tbsp of agave nectar (or honey)
  • 2 tsp of vanilla extract
  1. Preheat the oven at 180 degrees.
  2. Mix the flour, granulated and brown sugar, egg, vegetable oil, vanilla extract, baking powder and salt in a large bowl until you get a dough like consistency. It will feel grainy and crumbly, but that is the whole point!

NOTE:

I used a 22 cm/8.6 inches tin for this.
