Easy Yoghurt Plum Cake

A very easy and moist summer cake topped with sweet and tangy plums. This cake is made in just one bowl and it’s the perfect use for those extra plumbs you have sitting in the fridge. With some cream or ice cream, it’s the best take on a summer cake.

Yoghurt Plum Cake

I’ll be honest, the idea of this cake came to me when I found a punnet of plums sitting in my fridge I didn’t even know I had. That said, that was a very lucky coincidence and I am so not mad about it!

These cake is made with a good amount of yoghurt which makes it super moist, and it’s topped with fresh plums which makes it super juicy when you bite into it.

So, what is it made of?

This cake is super easy to make, this is all you need:

  • Softened butter
  • Vegetable oil
  • Granulated sugar
  • The zest of a small lemon
  • Greek yoghurt
  • Vanilla extract
  • Eggs
  • Salt
  • Self raising flour
  • Baking powder
  • Ripe plums

Easy Yoghurt Plum Cake

Ingredients:

  • 58 ml of vegetable oil – I used sunflower
  • 58 gr of butter at room temperature
  • 100 gr of granulated sugar
  • The zest of a small lemon
  • 120 ml of greek yoghurt
  • 1 tbsp of vanilla extract
  • 3 eggs at room temperature
  • A pinch of salt
  • 200 gr of self raising flour + an extra 30 gr to dip your plumbs
  • 1 and 1/2 tsp of baking powder
  • 5 ripe plums cut in half – they should be ripe but firm enough that they wont break while cutting into them

Method:

  1. Preheat the oven at 180 degrees celsius.
  2. Using your fingers, rub together the lemon zest and sugar, this will infuse the sugar with lovely lemon oil.
  3. In a large bowl, mix together the vegetable oil, butter and granulated sugar for 2-3 minutes until they acquire a shiny pearly white colour. Then, add the greek yoghurt.
  4. Add in the eggs one at a time beating them into the mix every time you add one. Then, add the vanilla extract and mix again.
  5. Add in the dry ingredients, the 200 gr of flour, baking powder and salt and mix just until incorporated, make sure you don’t over mix!
  6. Butter an 18-20 cm springform baking dish and pour your batter into it. Wash the plums, cut them in half and take the pit out. Dip the skin side of each half in the additional flour and place them on top of your cake and sprinkle some sugar on top.
  7. Bake in the oven for 45 to 50 minutes until a skewer comes out clean when inserted.
