Fudgy Crinkle Top Chocolate Brownies

How did I not have a brownie recipe until this point I do not know! But, to be honest, there are so many brownie recipes out there that I really wanted to do a recipe that was truly outstanding, and I think this may be it! These chocolate brownies are super fudgy and are made with double chocolate, that is, melted chocolate AND chocolate chips for that chocolate coma we all crave.

So, what are these made of?

These are super easy to make, and all you’ll need is:

  • Chocolate chips
  • Butter
  • Cocoa powder
  • Coffee granules
  • Eggs
  • Brown sugar
  • Granulated sugar
  • Flour

A few tips for success

  • Mix your cocoa powder with the melted butter and chocolate – this will make the chocolate flavour so intense.
  • Don’t skip the coffee granules! – again, this will make the chocolate flavour a lot more intense and your brownies so much more delicious.
  • Brown sugar is important – the brown sugar will contribute massively to the fudginess of these brownies.
  • Beat the eggs and the sugar for a few minutes – you want them to become pale in flavour and almost creamy, this will create the crinkly texture brownies have.
  • Better to undercook – that’s the key to fudgy brownies, brownies will keep cooking after they are taken out of the oven so it’s completely ok if they are gooey in the middle.

Super Fudgy Crinkle Top Chocolate Brownies

Ingredients:

  • 220 gr of dark chocolate chips – divided between 120 and 100 gr
  • 220 gr of butter
  • 2 tbsp cocoa powder
  • 1/2 tsp of granulated coffee
  • 4 large eggs
  • 170 gr of brown sugar
  • 50 gr of granulated sugar
  • 1 tsp of vanilla extract
  • 70 gr of flour

Method:

  1. Preheat the oven to 180 degrees celsius. Line a 9×9 inch baking dish.
  2. In the microwave or in a bowl over simmering water, melt 120 gr of chocolate chips and the butter. Once it’s melted, mix in the cocoa powder and granulated coffee until fully dissolved. Set aside.
  3. In a large bowl, beat together the eggs and sugar until creamy and foamy, 2-3 minutes. Then, mix in the chocolate/butter mix and lastly add in the vanilla extract.
  4. Fold in the flour until just combined and then the chocolate chips.
  5. Pour the mix into the pre-lined baking dish and cook in the oven for 25 to 30 minutes. You’ll know the brownies are done when the edges are set and a knife or skewer inserted in the centre of the brownie comes out with a bit of brownie butter on it.
  6. Allow it to cool down completely before eating. Enjoy!
