Dairy free apple crumble muffins

Have I ever mentioned that I love apple crumble?

I have decided to mix my love for apple crumble with my recent obsession with muffins and as a result of a mistake I ended up making them dairy free. It’s funny the things that you can learn sometimes, I almost gave up on this due to my mistake, but I decided to keep going and see what happened and now I am glad I did! So a bit of Tuesday wisdom for you: if you think you’ve made a mistake, keep going, because something nice may come out of it. I basically forgot all the dairy ingredients to make muffins so I had to improvise, and to be honest, this muffins taste just like normal ones, lovely, fluffy and mosit.

I am really looking forward to summer fruits, peaches, nectarines, plums… and incorporating them into my cooking, but until then, apples it is!

In a very simple way, this is basically a muffin with apples topped with a crumble which makes them lovely and crunchy when you bite and soft and moist under the surface, but you still find some nice pieces of apple in there.

This is how I made it

Ingredients: flour, sugar, brown sugar, oil, eggs, vanilla, warm dairy free milk, baking powder, apple puree, apples and a pinch of salt.

Process:

  1. To make the crumble part, mix the flour, sugar and brown sugar and baking powder, then add the oil, egg, vanilla and baking powder. I mixed it with a fork, it will form a wet dough, set aside.

2. For the muffins, mix the sugar and the oil together.

3. Add the warm dairy free milk and mix again.

4. Beat the eggs separately and add them to the mix together with the vanilla extract.

5. Add the apple puree.

6. Add the salt, baking powder and flour and mix well.

7. Add the apple pieces and mix well.

8. Transfer the batter into a muffin tray and fill it up to the top, then cover the center with the crumble mix. Don’t worry if the mix doesn’t cover the whole thing, the top will be covered when the muffins raise in the oven. Sprinkle a bit of sugar over and cook for 30-35 minutes in a preheated oven at 170 degrees celsius.

Dairy free apple crumble muffins

Ingredients (makes 12 muffins):

For the crumble:

  • 85 gr of flour
  • 22 gr of sugar
  • 16 gr of brown sugar
  • 40 ml of vegetable oil (I used sunflower)
  • 1 small egg
  • 1/2 tsp of vanilla extract
  • 1/4 tsp of baking powder

For the muffins:

  • 120 ml of vegetable oil
  • 200 gr of sugar
  • 120 ml of warm dairy free milk (I used plain almond)
  • 2 tbsp of apple puree (I used apple puree from Biona, bought at Whole Foods)
  • 2 eggs
  • 1 tbsp of vanilla extract
  • 260 gr of flour
  • 1 tsp and 1/2 of baking powder
  • A pinch of salt
  • 3 apples

Process:

  1. Preheat the oven at 170 degrees celsius.
