Another day, another soup. This is a very easy, quick and healthy one full of veg and goodness, it’s also vegan, so perfect for everyone.
The soup only takes about 30 minutes to make, so it’s perfect for one of those days when we don’t have a lot of time but we want something healthy and heartwarming. I literally did it while working, so it won’t even took a lot of my time. I had it with a bit of foccacia which I made the day before and kept in a container, the recipe for that will come on the blog very soon too!
I hope everyone is doing well. We had a bit of snow on Sunday here in London and to be honest, I feel like that was the most exciting thing that has happened since Christmas!
But back to the soup, I think what I like about this one is that you are eating pure veg but it tastes lovely, I added some paprika so it’s got a nice smokey flavour and the pumpkin seeds gives it a little crunch.
The ingredients are: cauliflower, garlic, leeks, water, salt, pepper, olive oil, Spanish paprika, a vegetable stock cube and pumpkin seeds. So easy!
