Cauliflower and leek soup

Another day, another soup. This is a very easy, quick and healthy one full of veg and goodness, it’s also vegan, so perfect for everyone.

The soup only takes about 30 minutes to make, so it’s perfect for one of those days when we don’t have a lot of time but we want something healthy and heartwarming. I literally did it while working, so it won’t even took a lot of my time. I had it with a bit of foccacia which I made the day before and kept in a container, the recipe for that will come on the blog very soon too!

I hope everyone is doing well. We had a bit of snow on Sunday here in London and to be honest, I feel like that was the most exciting thing that has happened since Christmas!

But back to the soup, I think what I like about this one is that you are eating pure veg but it tastes lovely, I added some paprika so it’s got a nice smokey flavour and the pumpkin seeds gives it a little crunch.

The ingredients are: cauliflower, garlic, leeks, water, salt, pepper, olive oil, Spanish paprika, a vegetable stock cube and pumpkin seeds. So easy!

Cauliflower and leek soup


  • 1 medium cauliflower (mine was 500 gr)
  • 1 leek
  • 2 garlic cloves
  • Water
  • Salt and pepper to taste
  • 1 tsp of Spanish paprika
  • Pumpkin seeds
  • Olive oil
  • 1 vegetable stock cube


  1. In a large pot, cook the leeks and the garlic with some olive oil until the leeks are nice and golden
  2. Add the cauliflower, salt and pepper to taste and the teaspoon of Spanish paprika and cook for 2-3 minutes so the veg get all the flavours
  3. Pour water over the veg and add the stock cube
  4. Cook until the cauliflower is soft (about 10 minutes)
  5. Blend the veg on the blender. I would advise not to pour all the water, put the veg on the blender with some water, blend and check the texture, keep adding water until you get to the desired texture.
  6. Pour on a bowl, sprinkle the pumpkin seeds and a bit of oil on top
